Revenge, Return, Redemption. It's like poetry....
Anyway, I thought of a good bittersweet ending of the Sequel Trilogy:
After the defeat of the First Order, Rey decides not to rebuild the Jedi Order because she knows that if she does, one of her students will betray her, massacre all her other students and force her into hiding. Then a young force-user will seek her out to learn the ways of the Force to stop her former student and the regime he/she now serves. Rey's new apprentice will then go on to save the galaxy after Rey's death and the cycle will begin again.
The only way to stop this endless cycle of betrayal and war is to not reform the Jedi Order. The galaxy no longer needs the Force. It survived just fine without it for 30 years.
I'd like to see almost any kind of ending, but I don't want a dark side ending. That just doesn't fit the franchise. Despite this, I know many fans who would want a dark side ending.
